Happy Monday! I hope you had an amazing weekend! This past weekend I volunteered at an annual event that provides prom dresses to Foster and adoptive children. It always to so nice to see the excitement in the young ladies faces as they select their prom dresses. Saturday the weather was gorgeous in Connecticut. It was so nice to be outside and enjoy the weather. Michael had a workout meet on Saturday morning, so I was up bright and early. Last week I stopped by my local Ocean State Job Lot for some Kamut and Spelt flour. Unfortunately, my local store was sold out. However, I was able to find some while in the area of one of my favorite towns. I’m looking forward to creating some recipes with these items. I’ve made a spelt pizza dough in the past and it was nice to have a recipe for a healthier alternative. Below I'm also sharing another menu plan with me video. I hope you enjoy it!

Happy Monday!

I hope you had an amazing weekend! It's officially getting closer to springtime. I can't wait to get back into the swing of things with my spring/summer routines. I'm such a spring and summer girl. Thank you for all the birthday wishes on my sons 16th birthday. Boy does time fly when you're having fun. I created a video sharing this weeks menu plan. I have so much fun creating these videos and they also keep me to continue to be consistent with my menu planning. Last week our meals were just all over the place, due to my anniversary and my sons birthday. Things were a little off track which I anticipated. Anywho...

Happy Monday!

I hope you had an amazing weekend. This past weekend was very relaxing for me. If you follow me on Instagram. I spent a good amount of time shopping on Saturday. Wednesday is Michael's 16th birthday and I wanted to see if I could find some items for him. The Mister and I are actually celebrating our anniversary today. Thus the reason our menu plan is a little different this week. I'm not sure if we're going out to eat tonight or if I'm going to make a special seafood sinner. Below I'm also sharing my menu plan with me video for this week. I really do enjoy creating these videos, and it helps me continue to be consistent with my menu planning process. Which I love, I think I may start planning earlier in the week so I can get me grocery shopping done before the weekend.

Happy Monday Friends!

I hope you had an amazing weekend! Like most football fans, I spent the better half of my weekend watching football. The Mister's team didn't make it to the playoffs. However, my sons team did and it was nice to enjoy the game... It feels as if I've hibernated these last couple of days. It really has been freezing in Connecticut lately. Low 20's which is unbearable for me. I prefer the high 70's. I know, I'm living in the wrong state. I'm so Thankful that I had the opportunity last week to make Sunday's dinner before hand. Baked ziti and stuffed shells is one of few meals that I make before hand and freeze. I really wish I could batch cook several of them for the month. especially since we have the room for them in the deep freezer. It was nice to just be able to relax on Sunday. So I'm going to work on creating more freezer meals that my family loves. I haven't tried any new dinner meals lately though. I tried a vegan recipe last week and it was an epic fail. One of the worse for me. However, it was a good learning experience... Anywho...

This year one of my goals for my family is to eat better while on the go. I thought this would be the perfect opportunity for me to share with you guys what's currently working for my family. With my daughter finishing up her first year in college and me trying to ensure that she doesn't stray away from her healthy eating habits. Also, with Michael being active with sports and appointments, meetings and everyday life. It's so easy to get off task while on the go.

4 Tips to Eat Better This Year While On The Go

Menu Plan


If you've been following my blog for a while. You know that I menu plan for my family on a weekly basis. I typically will menu plan the Thursday before and also review my grocery shopping needs while reviewing my schedule for any appointments, meetings and/or games. I create my grocery shopping list based on my menu plan and schedule. For example, If I know that I'm not going to be able to make breakfast Saturday morning due to a game or during the week when Michael is off to school. I can easily warm up a Jimmy Dean Delights® for him while he's heading out the door. When I'm shopping at Sam's Club. I always make sure that I pick up a box of Jimmy Dean Delights®. Menu planning is essential if you want a better lifestyle for your family. It makes it so much easier as a mom when you walk in the house from a busy day and dinner is in the crockpot or when you're running late and you can easily grab a Jimmy Dean Delights® which is a “better-for-you” protein solution which is the perfect way to start a busy morning.

Shopping List

As prior mentioned, I don't go to the store without a shopping list. Having a shopping list is essential. It's so easy to get distracted by all of the cute displays at the store or even sale items that you get off task and walk out with items that you didn't even need. I'm a lister so I love writing lists with pen and paper. Yes, I'm old school. I am not perfect by no means and often will forget my shopping list in my purse or even leave the list in the car, oh and let's not mention leaving the list on the pad at home. Yes, I'm guilty of that too. One of the tips that I have for you is taking a picture of your list once it's complete. If you forget your list at home or leave it in the car. You'll have a picture on your phone to remind you of the items needed. Nothing is more rewarding than going to the store and coming out with the items you actually needed. Especially when it's items for your menu plan. You've saving time by not having to run to the store because you have all the items needed. As a busy Mom, time is like gold.





Shop in Bulk

It's so easy for me to stay on task with better choices by shopping in bulk. I typically shop at Sam's Club. I love having their membership Sam's Club. They make it super easy to live a healthy lifestyle and meal prep for my family for the week. The Sam's Club membership has especially come in handy with a kid in college. A lot of times I'll have my daughter order the items that she needs prior to our drive to visit her and all I have to do is a Club pickup. Sam's Club has a huge selection of healthy foods. One of her favorites is the Tyson Grilled & Ready® Chicken which is a better alternative for her. She always raves about how fresh the grilled chicken taste and how juicy and tender it is. She loves that it's so easy for her to warm up and add to a salad or quinoa bowl. Also, most Sam's Club locations have a gas station next to them which makes doing grocery shopping and filling my tank a breeze. Plus, I save both time and money by being a Sam’s Club member.

Meal Prep

I'm one of those people who love the convenience of items being prepped so that's one less thing that I have to worry about doing. I'm a huge fan of freezer meals. If possible, I try to set aside a couple of hours to prep for the items that when will need for that week/month. I love purchasing bulk veggies like mushrooms, cleaning, slicing freezing and bagging them. It makes it so convenient when making a meal that requires mushrooms. One less item that I have to worry about slicing. The mushroom is proportioned out and all I have to do is just add them to my meal when cooking. This also works well for making individual smoothie packs too. Buy the bananas, berries, spinach, and bags at Sams Club and all I have to do is add the portion I want to a freezer safe bag. Freeze the bags until I'm ready to make a smoothie. Which is perfect for on the go. I also use this method for snacks. I have a snack basket in the kitchen. While we're leaving out. I'll typically grab a couple of snacks for myself and if the kiddos are coming too. I'll grab some for them as well. This makes accomplishing your goals for easy, on-the-go solutions for every meal occasion obtainable.

Eating better while on-the-go doesn't have to be a stressful task. It can actually be guilt free with a membership from Sam's Club and great quality groceries like Tyson® Foods.

Happy Monday!

Guess what this week is???!!! You guessed right, my birthday is this Saturday. YAY! First, how was your weekend? Last week was mid-terms for Michael and boy. I will be so happy once he's done with his first year of high school. Can't believe I just said that but I'm just being honest with Y'all.
Last week we also had another snow day. I will say that it's been nice to spend quality time with the family though. I only wish that the kids didn't have to make up the days. It's all fun and games until you're still in school at the end of June...
I did a lot of reminiscing and looking through my travel photos. Last year around this time I was returning back from San Juan Puerto Rico and planning my trip to Cancun Mexico. I will say that it's really nice to get a break from the snow during the winter months.
As of right now, I do not have any plans for my birthday. It will probably be low key and in the company of my family.

Happy New Year!

It's new to get back into the swing of things. Michael is heading back to school tomorrow as long as weather permits and our girle will be heading back to college within the next couple of weeks. 
I honestly slept in all last week which I really get the chance to do. Let me just be honest, sleeping in for me is staying in bed until 9:00 am. I am an early riser by nature so at times it's difficult for me to sleep in no matter how late I stay up. 
One of the meals on this weeks' meal plan that I've never shared with you guys is a crockpot chicken and stuffing. One of the reasons that I've never shared this recipe is because it's really hard for me to get a good picture of the finished product. To be honest, it really doesn't look as good as it tastes and Michael has requested this meal and said that “I'm slipping” for not making it as often as I used to. Just warning you guys that it doesn't look Insta delicious but it is. Just me, I've been making it for years. I also tested out another recipe a couple of weeks ago that my family loved and I can't wait to share that with you guys too.

This week I plan on making some of our family favs! I picked up some tortellini from Bj's so I plan on making my famous tortellini bake for my family this week. Happy Meal Plan Monday Everyone!
It feels like I haven't shared what's on my meal plan in like forever. I'm happy to say that for the month of October. I meal prepped for the entire month which I'm really excited about.
Anywho, How was your weekend? This past weekend I had the weeks mixed up with my daughter game and I was super excited about attending it this weekend. The Mister and I instead went on a date night. If you follow me on IG or Snapchat. I took your guys along with me... I am so happy that the last couple of days have been warm in my state. It was in the low 70s when we were on our way back home and there are times in the last couple of weeks that it was around the 40s. So yes, I'm happy! I find myself just sitting on my deck and enjoying the weather. It's so nice to be able to enjoy my deck during the fall months.

Prior to visiting London, I was researching various stores and how much food cost in the UK. I was pleasantly surprised when I stumbled upon a couple of YouTube videos with people doing a $20 a week food budget. As many of you know, I mostly eat a plant-based diet. However, I consider myself a pescatarian because I occasionally eat seafood.
Even though I have a monthly grocery budget for my family. I tend to go off track when it comes to shopping for myself. Also, since I’ve started to eat a lot healthier. My family and I typically eat different meals each night. Prior to my healthy eating journey. I would make one of two meals a week that we all could enjoy.
Since October is right around the corner. I started the challenge in September. I want to challenge myself to only spend $20 a week on groceries or a total of $80 for the month. I’m hoping that this challenge for myself will turn into a lifestyle change. Below are some of the things that I plan to do to be successful with this challenge. Also, I haven’t decided if I will roll over the money each month that I don’t spend. Still deciding on that aspect. I will say that my goal is to create more meals based off of what I already have at home.

Grocery List

I plane to create a grocery list weekly and stick to it. I’ve learned that when I have a list I spend less time in the grocery stores.

Meal Plan

I’ve learned that my eating habits and grocery bill are a lot better when I meal plan. My ultimate goal is to plan for myself and family for the entire month. I will start off continuing to do weekly meal plans though.

Buy What I Need

I’m horrible at this. I’m a bulk shopper by heart which means that Costco and Bj’s will not see a lot of me. I plan to only buy what I need and use what I have prior to running to the grocery store. This also means that I have to start and be a little bit more creative of what I eat in a day and plan for the week.

Food Tracker

Half of the time I forget what I have in my deep freezer and refrigerator. I plane to keep a list of the items that I have and check the items off the list once they're used. From this list, I hope to accomplish gaining a sense of what we actually buy, eat and use. I have a really picky palate but also like to try new foods. I’m hoping to keep at a list of foods to not buy again to avoid wasting money.

Hello, Friends!

Happy Monday! July is truly flying by. This is the Mister's Birthday month and I'm so ready for his birthday cake!! I have such a sweet tooth. I could just go out and buy a cake. However, I'm trying to get out of my old ways... Last week I reached my final edited weight loss goal and I've lost a total of thirty pounds! I feel amazing, and I'm so proud of myself.  You can read all about my weight loss journey here. I'm trying to get back into menu planning during the summer months and even though we're currently having a heatwave. I really miss baking. Of course, I've been working on healthy alternatives for myself and family. I have a super yummy zucchini recipe that I've been working on. This week our menu plan is super basic. I plan on trying a new marinade, and I'll let you guys know how the family likes it. I'm still unwinding from my recent trip to Blogger Bash you can read all about it here.

Happy Monday! I hope all of the Moms enjoyed their Mother's Day. My Mother’s Day was pretty low key. It rained pretty much all Saturday and partly on Sunday. Which was wonderful for my garden...I’m always sharing with people how awesome crockpots are. This week I plan on cooking more crockpot meals and using my crockpot more. This week I plan on using my crockpot twice this week for Tuesday and Wednesday meals. I also plan on freezer cooking Sundays meal. I would love to incorporate freezer cooking more in my meal prep. I will surely keep you guys posted.

Happy Monday Friends
One of my favorite sports seasons is now over and done with. It has been pretty cold lately in Connecticut so I've been really trying to make comfort food. Seeing how I menu plan for my family and myself, I typically will make a vegetarian or vegan option for myself. I'm always asked so "what do you eat?" Well, I'm a really picky eater so it's really hard for me to share exactly what I eat in a day. I
will
say that I'm really offended when someone states "you can have a salad" or "they have salad options". Unless it's a really unique salad and something that I can not recreate at home and/or just looks pretty I will typically pass. If I'm making Tacos for the family, I typically will have black bean tacos or something in that nature. I do try to limit the amount of dairy and seafood that I have.

Happy Monday!!! 

I love a new found love for ginger in my meals and drinks. Growing up my mother actually never used ginger. However, when I met the mister his mother would "Juice" and make delicious drinks with ginger  in them. My favorite drink is fresh pineapple and ginger and I have found some pretty yummy meals with ginger in them. Hence all of these meals with ginger in them.

 I finally found a pizza dough recipe that I am in love with. I enjoyed the recipe so much that I made pizza on Saturday and Sunday. (shhhh, let’s keep that a secret. ) I noticed that I have been eating a lot of fried foods and I’m really trying to cut back not saying pizza is a better option. My goal is to not have any fried foods during the week. However, I will leave room for one cheat day on the weekends.
