Happy Hump Day! With the kiddos home more than ever, I've started to be a little more creative with our old favorites, and decided to make pepperoni grilled cheese. If you follow me on Instagram, I shared a video Reel on how I was able to make this yummy treat. Not only is this recipe super easy to make, but you can also pretty much enjoy it any time of day, and pair it with your favorite soups.

Recipe

Pepperoni Grilled Cheese

Ingredients (Makes Two Sandwiches)
  • 4 slices Arnold Country Butter Bread
  • 4 slices American Cheese
  • 12 slices pepperoni 

  • 1/4 cup Mozzarella
  • 1/4 cup Parmesan cheese
  • 3 tablespoons (about)
Instructions
  1. Butter one side of Arnold Country Butter Bread
  2. Place a 1 slice American cheese, mozzarella and parmesan cheese, slices of pepperoni, and 1 slice American cheese on top of buttered bread.
  3. Place bread, buttered side down on stovetop grill or skillet.
  4. Cover the open-faced sandwich with a skillet lid Butter the upper side of bread and turn to brown on the other side. Plate & Enjoy!

Whether you're looking for the perfect snack or recipe to bring to your next gathering. These bacon-topped deviled eggs are sure to be a crowd-pleaser. Not only are they super easy to make. They do not require a lot of ingredients and can be made in advance. 




Bacon Topped Deviled Eggs Recipe

Ingredients 
  • 6 large eggs
  • ¼ cup Cooked and chopped bacon
  • 1/4 cup. mayonnaise
  • 1 tsp mustard
  • sea salt (to taste)
  • Freshly ground black pepper (to taste)
  • Smoked Paprika, for garnish
Directions

  1. Place eggs in a large saucepan and cover with cold water. Set the pan over medium-high heat and bring water to a boil. Turn off heat, cover pan with a lid, and let sit for 11 minutes. Drain, rinse eggs under cold water, and peel.
  2. Halve eggs lengthwise and scoop out cooked yolks into a medium bowl. Add mayonnaise, and mustard to the bowl, then mash yolks with the back of a fork and stir until the mixture is smooth. Season with salt and pepper to taste.
  3. Spoon mixture into each egg. Garnish with Cooked bacon and paprika and serve.

Happy Monday! I can't believe how fast this month is flying by. This weekend was pretty much low key. I slept in on Saturday and made breakfast on Sunday. It was nice to get out and run errands on Saturday, and the weather was pretty nice considering it being winter on Sunday. 
I've had the last of my Christmas decor boxed up, I just have to officially put it away. Anywho...

It’s officially cold and flu season and staying healthy is not always the easiest task. With COVID I’ve been more intentional than ever about what I set and the routines in which I have for my family. As a mom, my priority is and has always been to keep my family safe during cold and flu season, and especially during this pandemic. It’s so easy to overlook the small details that are just so important in terms of keeping your family safe. Below, I’m sharing tips on How To Keep Your Family Healthy and Safe.

Staying Active

It’s so important to make sure that your family is staying active. I like to create a workout schedule for my family. You can also include rewards, for example for whoever gets the most steps in each week. You can simply text your workout schedule to each family member or create a command center sharing the information.

Eat Well Balanced Diet

As a busy mom, it’s so easy to not pick the best alternatives for your family. Meal planning has really assisted me with keeping track of what my family eats, and it also ensures that we’re eating a well-balanced meal.

Wash Your Hands!

As simple as it sounds it’s so important to make sure that your family is properly washing their hands in and out of the home. This is a great way to make handwashing at-home fun for the entire family. You guys can sing your favorite song while doing so to pass time. You can also get creative and purchase your family's favorite scents of hand soaps and purchase fun soap dispensers if you have smaller children.

Drink Water

Choosing water is such a better alternative to staying hydrated. This is also another wonderful opportunity to include a reward system for those who drink their drinking goal daily. I’ve found that getting water bottles that your family loves really motivates my family to drink more water. I’ve also noticed that my children drink more water when the water is bottled.

It's officially the beginning of the new year, and I couldn't wait to share with you guys what I'm proud of for the month of December. I have to say that this month truly flew by. I didn't do have of the fun stuff that I wanted to do this month. I will say that I'm thankful for the things that I was able to do though. Below, I'm sharing 5 Things that I'm proud of.

Shopping
I didn't go crazy with the after-Christmas sales which I'm proud of myself for. It's super easy to just buy to buy. Execpailly when things are such a great price.

Planner

I used my planner often. One of my goals this year was to use my planner more. With everything going on, I wasn't sure if I would even use my planner. I'm so happy that I've found reasons too. Something about using my planner really just adds a spark to my day.
Slept-In

I can honestly say that I got plenty of rest in the month of December which I'm truly thankful for.

Journal

I journaled often, not as much as I would have liked to. However, I did journal and I made it happen. Journaling is such a great way to just clear your mind.

Took Time off When Needed

I took a lot of much-needed time off which I'm truly thankful for.

I wanted to share with you my top vegan recipes from 2020. I have to be honest, it was really hard to decide on just four. But here we are! The recipes below I tried and love. The vegan oyster chick'n recipe has to be hands down my favorite. I'm not sure if it was 2019 or 2020 that I finally got my hands-on oyster mushrooms. However, 2020 was when I hit the motherload and had an abundance of it. While doing a random shopping trip I located it at my local grocery store at a fraction of the price of what I was paying. They would sell out fast. However, when they would have some in stock, a little would go a long way and I'm so thankful for this find. Oyster mushrooms are a game-changer. 

The homemade pizza dough was what helped me at the peak of the pandemic. I wanted pizza, however, I was out of yeast. I'm so happy that I decided to give this a try, and I honestly can't see myself going back to making pizza the other way. This is such a better alternative. The vegan cheesecake was on my "make list" for the longest. I would always be out of something until one day it finally happened. I finally had everything on hand, and honestly, this is one of my favorite vegan desserts. The Twix recipe was another that was on my "make list" I ate the entire batch the same day. Everything about this recipe is so yummy. Besides, who doesn't love Twix!
