Healthy Homemade Granola

For the last couple of days, I've been craving granola. It justs one of my favorite snacks. Perfect to the top on your favorite yogurt, indulge in as a cereal with sliced bananas, and coconut shavings. Yes, please! Typically when I bake, I like to bake all of my favorites the same day which is typically a couple of desserts. Like my chocolate vinegar cake, or even my vegan donuts or cookies. It's just so much easier that way so I have all of my treats made for the week. I guess when can call it batch baking day! Anywho, I can't remember the last time I made granola. I have to make sure to keep it on rotation. It's so versatile and really makes the perfect snack. Plus, it smells amazing from start to finish.

Recipe

Ingredients
  • 4 cups Old Fashioned oats
  • 1 cup Pecans
  • 1/2 cup pumpkin seeds
  • 1/2 cup grapeseed oil
  • 1/2 cup maple syrup
  • 1 tablespoon honey
  • 1/4 teaspoon Himalayan Salt
  • 1/2 teaspoon Cinnamon
  • 1 teaspoon vanilla extract
Directions
1. Preheat oven to 350F. Silpat line a baking sheet
2. In a large bowl mix the oats, nuts, seeds, and cinnamon.
3. Pour in grapeseed oil and, vanilla extract honey. Mix well, until all coated.
4. Spread the mixture in a thin layer on a baking sheet lined with parchment paper.
5. Bake for about 30 minutes, stirring every 8-10 minutes, until golden brown.
6. Remove from oven, let cool completely, then break the granola into pieces with your hands, transfer to an airtight container.

(This granola can be kept in an airtight container at room temperature for up to two weeks.)
