Vegan Sweet Potato Brownies

Ingredients
- 2 Medium sweet potatoes
- 4 tablespoons of pure maple syrup
- 2 tablespoons of melted coconut oil
- A pinch of Himalayan salt
- 1 cup oats flour
- 6 tablespoons of raw cacao powder
- 2 tablespoons of coconut oil
- 2 tablespoons of almond butter
- 1 tablespoon of maple syrup
- 2 tablespoons of cacao powder
- Preheat oven to 350 degrees
- Bake or steam sweet potatoes until soft
- In a bowl, add all of the ingredients (salt, oats flour, maple syrup, cacao powder)
- Place into a lined baking dish and cook for about 45 minutes
- While the brownies are cooking make the icing by melting all the ingredients together and stirring well
- Remove brownies from the oven and allow cooling.
- Spread the icing on top, cut into squares, and enjoy!

Never had sweet potato brownies but always willing to try out a new brownie recipe. These look very moist and rich. Perfect of course.

ReplyDeleteI do love sweet potatoes. My husband does, too. We buy a big bag from Sam's Club (when they have them), and go through them quickly.
