Happy Thursday! I wanted to share with you guys a recipe that I'm loving right now. I'm trying to eat as healthy as possible during this weight loss journey that I'm on. One of my weaknesses is fried foods. From fried fish to french fries. ( oh, how I miss thee ). Anywho, I am not here for boring diet foods. I feel that you still can eat right and actually like what you're eating. I honestly tried this recipe because I had some fresh pineapple on hand. I am not one of those people who would have tried this at a restaurant (I like to keep it safe, LOL ) But I will say that I would venture off any try this recipe if I saw it on a menu. The salmon came out perfect. I added paprika and cayenne pepper for that extra kick. I am also learning that I heart cilantro. It's so yummy.

Ingredients
For the salsa:
1 medium size tomato1/4 pineapple
1/4 onion
1 clove garlic – minced
1 tsp lime juice
1/4 tsp salt
chopped fresh cilantro (about a hand full)
Salmon
1 lb salmon filetpaprika to taste
cayenne pepper to taste
1 teaspoon of olive oil
salt & pepper to taste
Directions
Chopp all vegetables to your desired size and combine in a bowl combine; set aside.Heat a nonstick grill pan coated and add the olive oil. Sprinkle fish with salt, paprika and cayenne pepper. Cook fish 4 minutes on each side or until it flakes easily when tested with a fork. Top with salsa.

Yummy. I've never tried pineapple salsa. I might make it with chicken instead of salmon, since I'm not big on seafood.

Pineapple salsa sounds yum and I heart cilantro too - its such a refreshing herb and brings a lot of tanginess to any recipe!!
ReplyDeleteYum! I love pan seared salmon. I normally season mine with just paprika, salt, and pepper. It would go great with this pineapple salsa!

ReplyDeleteThis sounds like such a yummy combination! It's so funny but in Hawaii I guess I eat this combo all the time, but I never think to keep the salmon in a whole filet. I'll have to try this!
